/ MY STORY

My name is Chloé. I am French and recently moved to New Jersey.

​

Although I'm 5'11 tall today, I was small once! And it was then that I fell in love with patisserie. And I've never forgotten that first love, especially as it was passed on to me by my much-loved grandmothers, Jacqueline and Lydia. A simple hobby during my teenage years, I nevertheless cultivated my interest in pastry-making and gradually developed my skills. 


I was already working on healthier recipes to treat my grandmother Lydia, whose health could no longer tolerate sugar. Even if these first attempts were inconclusive, the idea and desire to combine sweet pleasure and well-being was born, to enable people like my grandmother to enjoy themselves without damaging their health.

At the same time, I spent 6 years studying food and nutrition engineering, and found a job in this field. In the end, I resigned to study for a pastry diploma. I started out working in pastry shops in Paris, and soon realized that I wanted to put my studies to good use and create a healthier 2.0 pastry.

/ WHY LOW GLYCEMIC ?

​

​

​The Glycemic Index (GI) measures how quickly a food raises blood sugar levels after consumption. The index ranges from 0 to 100.

​

The higher the blood sugar rises with the consumption of sugary foods (carbohydrates), the more insulin the pancreas secretes in response.

Insulin is a hormone responsible for storing glucose in different forms in the liver and fat cells.

A sharp increase in blood sugar can cause discomfort such as fatigue, cravings, irritability, and weight gain.  In the long term, it can contribute to conditions like type 2 diabetes, obesity, and cardiovascular diseases.

​

Traditional pastries and store-bought cakes have a high Glycemic Index. This is due to the use of refined flours, sugars, and saturated fats, which cause a rapid spike in blood sugar levels.

Fiber, fats, and proteins help lower blood glucose levels. To create low-Glycemic pastries, high-GI ingredients are replaced with lower-GI alternatives, and ingredients rich in fiber and healthy fats are prioritized.
